 the GOOD rice

Ever since the low carb craze began, some of us feel guilty eating anything white. But guess what... even South Beach approves of brown rice. Our newest Trader Joe’s find: frozen organic brown rice (that’s it, no other ingredients). Just pop the bag in the microwave and, voila, three minutes later you have wonderfully nutty, flavorful and healthy brown rice. With a little imagination you can create dozens of easy, quick and delicious meals. 

Here’s one to start you off and some additional suggestions to expand your repertoire.

 the RECIPE

Chicken Veggie Casserole
2 bags TJ’s brown rice 
1 package TJ’s Brittany frozen veggies 
1/2 lb mushrooms 
1/2 c chopped scallions or onions olive oil for saute 
1 package TJ’s fresh grilled chicken or make your own 
1 cup TJ’s shredded parmesan cheese 
Juice of one lemon 
salt and pepper to taste
 
Saute mushrooms and onions.
Add cut up grilled chicken, half of the cheese, lemon juice and steamed vegetables to rice. Mix together, top with remaining cheese and bake for 15 minutes at 350 degrees.

Variations: 
Italian - substitute meatballs (Trader Joe’s of course) for chicken, add canned tomatoes, basil, oregano, garlic, and parmesan cheese 
Chinese - use chicken, beef or pork; add water chestnuts, scallions, peapods and scrambled eggs. Add soy or teriyaki sauce, your choice. 
Cold - any chopped veggie, fresh or frozen, feta cheese, pine nuts, currants, parsley and/or cilantro. Add any great vinaigrette. You can even add Italian tuna.
The possibilities are endless.
